Vegetable Mexican Quesadilla recipe is a very popular Mexican recipe stuffed with cheese and a lot of healthy veggies.
Olive Oil – 1 tbsp
Garlic chopped – 1 tbsp
Onion chopped – 1 medium
Bell pepper chopped – 2 cups
Sweet corn boiled – 1 cup
Baby Spinach whole– 1 cup
Italian seasoning – 1 tsp
Red Chilli flakes – 1 tsp
Mozzarella Cheese shredded – 2 cups
Tortilla – 4
Salt to taste
You can use salted butter or vegetable oil instead of olive oil.
Thin whole wheat or corn flour chapati can also be used instead of a tortilla.
You can add paneer or boiled kidney beans in the filling as well.
